Gressingham Duck Recipes To Try Today

Crispy Gressingham Duck Breast with Orange Glaze

A modern twist on the French classic Duck à l’Orange. Pan-sear Gressingham duck breasts until golden and crisp, then drizzle with a zesty orange and Grand Marnier reduction. Pair with creamy mashed potatoes and tenderstem broccoli for a restaurant-quality finish. Why not pair with one of these red wines?

You’ll need:

  • 1 whole Gressingham duck
  • 1 orange (zested and juiced)
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp Chinese five spice
  • Salt and pepper

Steps:

  1. Preheat your oven to 200°C (180°C fan).
  2. Pat the duck dry with kitchen paper and prick the skin all over to help release the fat.
  3. Season generously with salt, pepper, and five spice.
  4. Place on a rack in a roasting tin and cook for 90 minutes, draining off the fat halfway through (save it for roasting potatoes!).
  5. In a small pan, mix the orange juice, zest, honey, and soy sauce. Simmer until slightly thickened.
  6. Brush the glaze over the duck for the final 10 minutes of cooking to give it a glossy, caramelised finish.
  7. Rest for 10–15 minutes before carving.

Perfect with: Roasted parsnips, buttery mash, and a side of red cabbage.

2. Gressingham Duck Leg Confit

The ultimate slow-cooked comfort dish, this Gressingham Duck Leg recipe is sure to become a favourite for date night. Cure duck legs overnight with salt, thyme, and garlic, then cook gently in duck fat until the meat falls off the bone. Serve with puy lentils or roasted potatoes for effortless elegance.

You’ll need:

  • 2 Gressingham duck legs
  • 3 garlic cloves, crushed
  • 500g baby potatoes, halved
  • 1 tbsp olive oil
  • Fresh thyme, salt, and pepper

Steps:

  1. Preheat the oven to 180°C (160°C fan).
  2. Season the duck legs with salt and pepper and place them skin-side up in a roasting dish.
  3. Add the potatoes, garlic, thyme, and a drizzle of olive oil around the duck.
  4. Roast for 90 minutes, or until the duck skin is crispy and the meat is tender.
  5. Toss the potatoes in the duck fat halfway through for extra crispiness.

  1. Preheat oven to 200°C (180°C fan).

  4. Shred the meat and serve with pancakes, hoisin, cucumber, and spring onions.

4. Duck Breast with Cherry and Red Wine Sauce

World-famous The Fat Duck focuses on the art of conscious eating with The Mindful Experience

Heston Blumenthal OBE is among the first chefs in the world to address a revolution in eating habits motivated by weight loss, by designing The Mindful Experience menu.

The Mindful Experience will be a version of the Fat Duck’s ‘Journey’ menu, scaled back in terms of the size of the dishes, but designed to retain the same impact of texture and flavour. Both menus will be available at the restaurant, and diners can book which they prefer.

There has been a dramatically rapid revolution in our eating habits in the last few years. Food Manufacture noted that, in 2025, ‘37% of UK consumers cite weight loss as a top health priority’.  An increasing number are choosing weight-loss drugs to achieve this. According to a Future of Food seminar held by UK Hospitality, 7 per cent of UK adults – 3.6 million people – are now using drugs such as Ozempic, Wegovy and Mounjaro, which help suppress the appetite and reduce interest in food and drink.

These seismic shifts in people’s habits of consumption will inevitably require an evolution of the UK foodservice industry. Survival in what has become an extremely challenging market (with 20 venues disappearing per week in 2025, according to Hospitality chief executive Kate Nicholls) is likely to depend on how well any enterprise adapts to a hospitality landscape that is being reshaped by the expectations of younger generations and the rapid rise in the use of weight-loss drugs.

Pioneering chef Blumenthal has been at the forefront of new developments in food and cooking and has frequently expressed an interest in gut health and the microbiome. A chapter in his most recent book, Is This a Cookbook?, is devoted to the concept of mindful eating. He’s also well placed to understand the consequences of appetite suppressants since he has been taking Mounjaro to combat the weight gained as a side effect of his medication for type 1 bipolar.

Heston Blumenthal OBE says: “Millions of people are eating much less food, drinking less, losing interest in restaurants, losing interest even in food. For more than a decade I’ve been saying that mindful eating is one of the keys to happiness and mental health: I even did a podcast on this in 2019 called ‘The best raisin you’ll ever eat’.* One of the unanticipated effects of taking Mounjaro has been that I’ve become even more aware of my tastebuds and how hunger works, and I’m eating in a more mindful, focused manner. Mindful eating can of course be applied to any experience – even an airline meal or a store-bought sandwich on your lunchbreak – but this new version of The Fat Duck menu is carefully tailored to a growing demand for a different restaurant experience. Sometimes, less really is more. Sometimes, depending on your mood and how you’re feeling – how your gut is feeling – you might well just desire less of everything. Sometimes, equally, you might just want to focus on taking your time with each and every mouthful and slowly exploring its effect on all of your senses. The Mindful Experience offers a way of satisfying these needs.”

Heston adds: “People used to joke that the portions on a tasting menu were so small that you had to grab a burger on the way home. But now, as our needs and expectations and appetites change, maybe this carefully structured menu is the perfect answer to what many people are looking for.”

The price of the Mindful Experience will be £275.00, which reflects the fact that The Fat Duck is well known for using a high number of staff to deliver its highly complex three-Michelin-star dishes, with almost as many chefs and waiters as guests during service.

For a relatively small town, Lewes boasts an impressive range of independent dining options. From cosy pubs and pizzerias to vibrant Thai and Indian eateries – and as of last week, there’s a new addition that’s already making waves: a Japanese restaurant that’s not to be missed, Haru Izakaya Lewes.

Located just up from the station on the site where Fork used to be, it’s a spot that feels as though it was always meant to be a Japanese. The decor of Haru Izakaya Lewes is minimalist and relaxing with orange tiled floors and sleek wood-panelled walls. There a counter top where you can dine and watch the chefs hard at work, or a range of tables for both couples or larger groups. A terrace at the back begs for languid summer evenings spent soaking up the last of the suns rays while sipping on a glass of Sake and picking at a big bowl of tempura vegetables. 

It’s a Sunday night when we visit yet the restaurant is busy and the atmosphere is buzzing with the kind of low-key hum that signals a local favourite in the making.

Staff are friendly and welcoming and we’re seated at a table by the window. Light floods in and it’s a beautiful spot to both watch the happenings of the kitchen and also passers-by outside. Japanese dining culture places a strong emphasis on sharing plates, especially in izakayas, informal pub-restaurants known for their flavourful small dishes shared among friends. That spirit is alive and well at Haru Izakaya Lewes. The menu is built around shareable dishes such as small plates, salads, tempura, yakitori and kasiyuki. There are then a range of rice and noodle dishes, uramaki rolls and sushi.

It’s recommended we pick 2-3 dishes each to share between us and see how we get on. We order a bottle of rose which is promptly brought over while be try and make our decision. With not only a tantalising array of choices on the menu, but also the scents of the open kitchen wafting over to us it’s no mean feat!

Drinks wise there is a great selection including Japanese beers Asahi and Kirin, wines, house cocktails, Japanese spirits, Sake, teas (including bubble tea) and a range of soft drinks.

We eventually settle on prawn and vegetable tempura, Karaage chicken, chicken yakitori and Angus beef tataki. Dishes are brought out as they’re made so everything is fresh and it laces the meal out nicely. Flavour is the name of the game here and I’m impressed in how simply delicious everything is.

The Angus beef tataki, lightly seared, thin slices of marinated beef served with a citrusy soy is a standout. The karaage chicken which is marinated and covered in batter  and the chicken yakitori skewers are also fantastic.

For mains we share chicken yakisoba – a very generous portion where tender strips of chicken are tangled with crisp vegetables and noodles in a rich, unami sauce. It was tangy, flavoured and divine (and had us fighting for the last bite!)

Dessert wise I opt for the chocolate Dorayaki which is a traditional Japanese desert. Two fluffy pancakes are delivered with a decadent chocolate cream sandwiched in the middle. My partner selects an ice cream bowl for something light to round the meal off. 

Prices at Haru Izakaya Lewes are very reasonable and you can easily have a special meal for two with a bottle of wine for under £80. Alternatively, you can pop in for a bowl of fresh curry and a Japanese tea and you’re looking at under £20 per person.  

Everything is beautifully prepared and unfussy, perfectly flavoured and great sized portions. It’s somewhere you can come for a date night and spend your time relaxing over a few dishes or you can pop in for a warming bite to eat or your way home from work when you just don’t fancy cooking. The service is fantastic and you can feel their own passion for the restaurant and the care they put into everything they do. 

Haru Izakaya is a new player to the Lewes scene but feels like it’s always been here. It offers a warm welcome when you enter and fresh, flavourful food that won’t disappoint. The Perfect Vanilla Fudge Recipe

Ingredients:

  • 1 vanilla pod
  • 700g granulated sugar
  • 120ml whole milk
  • 120ml double cream
  • 60g unsalted butter, cubed
  • 1/2 tsp sea salt
  • Optional: 40g chopped nuts or dried fruits for texture

Method

  1. Prepare the Vanilla Pod:
    • Split the vanilla pod lengthwise and scrape out the seeds with a sharp knife. Set aside the seeds and the pod.
  2. Combine Ingredients:
    • In a heavy-bottomed saucepan, combine sugar, milk, cream, butter, and the vanilla seeds. Add the scraped vanilla pod to the mix for extra flavour.
  3. Heat the Mixture:
    • Place the saucepan over medium heat and stir until the sugar dissolves completely.
    • Attach a candy thermometer to the pan and bring the mixture to a boil without stirring further.
  4. Cook to the Right Temperature:
    • Heat the mixture to 115°C, known as the “soft ball stage.” This ensures the fudge will set properly.
  5. Remove from Heat:
    • Take the pan off the heat and discard the vanilla pod. Allow the mixture to cool to about 43°C
  6. Beat the Fudge:
    • Using a wooden spoon or an electric mixer, beat the cooled mixture until it thickens, loses its glossy appearance, and starts to hold its shape. This process helps create a creamy texture.
  7. Add Mix-Ins (Optional):
    • If desired, fold in chopped nuts or dried fruits for added texture and flavour.
  8. Set the Fudge:
    • Pour the fudge into a lined 8×8-inch (20x20cm) baking dish, spreading it evenly. Allow it to cool at room temperature until firm.
  9. Cut and Serve:
    • Once set, cut the fudge into small squares and serve. Store in an airtight container at room temperature for up to a week.

Mary Sue Milliken is a renowned and accomplished chef and restauranter known for her innovative approach to Mexican cuisine. Having developed her passion for cooking at a young age, she went on to train at the Washburne Culinary Institute in Chicago before working in a few different restaurants across the US. In 1981, Mary Sue teamed up with Susan Feniger, a fellow chef and restauranteur where they went on to open their first restaurant, City Cafe, in LA.

Their collaboration flourished and they now have several popular Los Angeles restaurants under their belt, including Border Grill, Ciudad, and Socalo – all of which are highly popular and sought after thanks to their divine menus, fresh ingredients and fantastic ambience. As well as her restaurant ventures, Mary Sue Milliken has written an array of cookbooks such as ‘City Cuisine’ and ‘Mesa Mexicana’ as well as appeared on cookery shows such as Too Hot Tamales. We recently caught up with Mary Sue to find out more about her chef experience, Santa Monica, where Socalo is based and the importance of sustainability in the kitchen.

Santa Monica is known for its diverse culinary scene. How do you incorporate various cultural influences into your dishes?

I am endlessly curious and always learning about new techniques and ingredients from different cultures, and it is easy to use that knowledge at Socalo which is our Southern California Mexican gastropub situated within Santa Monica’s Gateway Hotel.

What local ingredients from the area do you enjoy working with the most, and why?

Mary Sue Milliken

I love that our farming community who show up at our famed markets, citywide, are always experimenting with interesting, new, and exciting varieties of produce. The last few years, the abundance of multiple kinds of chicories has blown me away. Escaroles, puntarelle, dandelion, frisee, have all been off the charts. We are also spoiled with amazing citruses like kumquats and limequats.

With health-conscious dining on the rise, how do you balance flavour and nutrition in your dishes?

I just take it as a challenge to create dishes that are irresistible in flavor without any hidden nutritional “bad guys.” I approach every meal with an 80/20 lens, where 80% of the dish is plant-based and 20% is meat or cheese. That is always in my head when I am creating a dish or menu.

Santa Monica is a trendsetting city. What culinary trends are you currently excited about, and how are you integrating them into your menu?

Anything with crispy cheese. At Socalo, we make delicious Vampiro tacos where we griddle the cheese on the tortilla first to get it nice and golden brown, and then add the steak, shrimp, and other accompaniments. We also fry cubes of cheese and turn them into croutons for our kale Caesar salad.

Sustainability is becoming increasingly important in the culinary world. How do you practice sustainability in your kitchen and restaurant operations?

We are lucky to be in Santa Monica, which supports sustainable practices in restaurants. Our to-go containers are compostable, we keep our menu plant-heavy, and source our ingredients from local markets.

How do you navigate the challenges of sourcing ingredients locally while maintaining the quality and consistency of your dishes?

A chef has a responsibility to adapt to local ingredients which are never consistent because weather and humans are not consistent. If you are a good chef, and intimately engaged with product, you are able to adapt and alter things on the fly to still make a spectacular dish.

Have you ever had any kitchen disasters?

Too many to list. Most recently, at a catering gig, a new chef bought a different kind of plantain for our plantain empanadas, and instead of frying up as they have for the last several decades, they disintegrated when they hit the pan. Luckily, we could run back to the restaurant and get a replacement. Disasters are a part of the job.

As a local, what are some of your hidden gems in Santa Monica?

Some of my personal favorite foodie spots include Xuntos, a Spanish tapas bar in the heart of the city, Interstellar, offering unique Korean and American fusion dishes and Cobi’s Southeast Asian cuisine that was Michelin Guide Listed 2023. There are also great alternatives for vegans such as BERBERE which serves plant-based dishes with an Ethiopian twist.

To anyone visiting Santa Monica for the first time, what’s some advice you would give them?

Try to save time every day to visit the beach early in the morning or at sunset for a stroll. Bring your appetite, as there are plenty of fabulous places to eat. If you like hiking like I do, there are some great trails in the Santa Monica mountains.

Get the temperature right

According to Jens Knoops – founder of Knoops chocolate drinks, the temperature is an important element for creating a perfect hot chocolate. “Getting the temperature of the milk correct is vital. Nutrients like Vitamin D and B12, which are important for calcium absorption, are sensitive to heat and you can end up destroying these and burning the sugars – creating a bitter taste. We find with our chocolate flakes, heating to 65- 70°C is perfect.”

Use high quality chocolate

The better quality the chocolate you use in your hot chocolate, the better the taste will be. Try to forego powder hot chocolate mixes and instead opt for brands that use real chocolate flakes that melt into the milk. You will have a much more authentic, flavoursome and creamy finish.

Don’t be afraid to experiment with flavours

Just because the traditional hot chocolate is made from plain chocolate, doesn’t mean yours has to be! Don’t be afraid to mix it up by adding different flavours to your drink. You could add in spices from your cupboards such as cinnamon or nutmeg, or why not add in fresh mint, a splash of Baileys or a caramel syrup? Experiment to see what works best for you.

Think about the milk you use

The milk you use can impact the quality of your hot chocolate. The more fat there is in your milk, the more creamy it will taste – you could even consider adding a dash of cream for extra indulgence! If you don’t drink dairy, plant-based alternatives work well too! We’d recommend oat milk as your top option as this provides the creamiest result, but soy and almond milk are great choices too.

Take care in the process

While it can be tempting to heat your milk up in a microwave for both convenience and less washing up, this is the worst way to make hot chocolate. The reason for this is that you can’t control the temperature and can often end up with milk that is either not hot enough or that has burnt. Instead, heat the milk slowly on a stove with a whisk or use something such as a velvetiser or milk frother to get the perfect temperature. Think about what you will also finish your hot chocolate with – will you top it with whipped cream and marshmallows? Or sprinkle on a few chocolate flakes? The choice is yours!

Achieve the perfect smokey flavour by adding wood to your BBQ; but be careful not to overdo as you don’t want an acrid taste. Try adding it slowly to let the flavour build gradually. Of course, you’ve got to add plenty of seasoning throughout – barbequed meat, fish and veg will stand up to any combination so don’t be afraid of experimenting.

Don’t oil vegetables you’re grilling, as burnt oil will overpower the vegetables leaving an unpleasant aftertaste. The best way is to make sure your BBQ is the right temperature and grill the vegetables dry, then once cooked place them on a wire rack and marinate in some good olive oil, fresh lemon and herbs. Grill slowly too, so that any fat from meat doesn’t catch fire – a good BBQ should be glowing, not flaming.

Marinade your meat ahead of time – I like to marinade mine at least 24 hours in advance to really let the spices penetrate the meat. Typically, I like to use a mix of chillies, thyme, garlic, spring onion, ginger, pimento, oil paprika & my homemade favourite Sazon. For shellfish, keep them in a slightly cooler spot for longer on the grill, to absorb more of the smoky flavour.

I’m a strong believer in brining your meat before a BBQ. This pre-seasons the meat and keeps it nice and juicy. The best brine for me is 24hrs with a 10% sugar and 10% salt mix (I.e., 800ml water, 100g salt, 100g brown sugar.) Bring this mixture to the boil and leave to cool. Soak white meats in this such as pork and chicken for deliciously tender dishes. 

A secret hack of mine is to chuck some herbs like rosemary or thyme into the hot coals as you’re cooking the meats, which not only gives it a great flavour, but the aroma is like to make the neighbours jealous!
