We all love a big night out with friends. But mention going on a “big night out” to anyone in the UK and they’ll immediately think pints, cocktails, shots and one hell of a hangover in the morning. Gressingham Duck Recipes To Try Today

Crispy Gressingham Duck Breast with Orange Glaze

A modern twist on the French classic Duck à l’Orange. Pan-sear Gressingham duck breasts until golden and crisp, then drizzle with a zesty orange and Grand Marnier reduction. Pair with creamy mashed potatoes and tenderstem broccoli for a restaurant-quality finish. Why not pair with one of these red wines?

You’ll need:

  • 1 whole Gressingham duck
  • 1 orange (zested and juiced)
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp Chinese five spice
  • Salt and pepper

Steps:

  1. Preheat your oven to 200°C (180°C fan).
  2. Pat the duck dry with kitchen paper and prick the skin all over to help release the fat.
  3. Season generously with salt, pepper, and five spice.
  4. Place on a rack in a roasting tin and cook for 90 minutes, draining off the fat halfway through (save it for roasting potatoes!).
  5. In a small pan, mix the orange juice, zest, honey, and soy sauce. Simmer until slightly thickened.
  6. Brush the glaze over the duck for the final 10 minutes of cooking to give it a glossy, caramelised finish.
  7. Rest for 10–15 minutes before carving.

Perfect with: Roasted parsnips, buttery mash, and a side of red cabbage.

2. Gressingham Duck Leg Confit

The ultimate slow-cooked comfort dish, this Gressingham Duck Leg recipe is sure to become a favourite for date night. Cure duck legs overnight with salt, thyme, and garlic, then cook gently in duck fat until the meat falls off the bone. Serve with puy lentils or roasted potatoes for effortless elegance.

You’ll need:

  • 2 Gressingham duck legs
  • 3 garlic cloves, crushed
  • 500g baby potatoes, halved
  • 1 tbsp olive oil
  • Fresh thyme, salt, and pepper

Steps:

  1. Preheat the oven to 180°C (160°C fan).
  2. Season the duck legs with salt and pepper and place them skin-side up in a roasting dish.

  1. Preheat oven to 200°C (180°C fan).
  2. Pat duck dry, mix five-spice, soy, and honey, and brush over the skin.
  3. Roast 90 mins until skin is crisp, turning halfway.
  4. Shred the meat and serve with pancakes, hoisin, cucumber, and spring onions.

Perfect with: Steamed bok choy or a simple soy and ginger dipping sauce.

4. Duck Breast with Cherry and Red Wine Sauce

World-famous The Fat Duck focuses on the art of conscious eating with The Mindful Experience

Heston Blumenthal OBE is among the first chefs in the world to address a revolution in eating habits motivated by weight loss, by designing The Mindful Experience menu.

The Mindful Experience will be a version of the Fat Duck’s ‘Journey’ menu, scaled back in terms of the size of the dishes, but designed to retain the same impact of texture and flavour. Both menus will be available at the restaurant, and diners can book which they prefer.

There has been a dramatically rapid revolution in our eating habits in the last few years. Food Manufacture noted that, in 2025, ‘37% of UK consumers cite weight loss as a top health priority’.  An increasing number are choosing weight-loss drugs to achieve this. According to a Future of Food seminar held by UK Hospitality, 7 per cent of UK adults – 3.6 million people – are now using drugs such as Ozempic, Wegovy and Mounjaro, which help suppress the appetite and reduce interest in food and drink.

These seismic shifts in people’s habits of consumption will inevitably require an evolution of the UK foodservice industry. Survival in what has become an extremely challenging market (with 20 venues disappearing per week in 2025, according to Hospitality chief executive Kate Nicholls) is likely to depend on how well any enterprise adapts to a hospitality landscape that is being reshaped by the expectations of younger generations and the rapid rise in the use of weight-loss drugs.

Pioneering chef Blumenthal has been at the forefront of new developments in food and cooking and has frequently expressed an interest in gut health and the microbiome. A chapter in his most recent book, Is This a Cookbook?, is devoted to the concept of mindful eating. He’s also well placed to understand the consequences of appetite suppressants since he has been taking Mounjaro to combat the weight gained as a side effect of his medication for type 1 bipolar.

Heston Blumenthal OBE says: “Millions of people are eating much less food, drinking less, losing interest in restaurants, losing interest even in food. For more than a decade I’ve been saying that mindful eating is one of the keys to happiness and mental health: I even did a podcast on this in 2019 called ‘The best raisin you’ll ever eat’.* One of the unanticipated effects of taking Mounjaro has been that I’ve become even more aware of my tastebuds and how hunger works, and I’m eating in a more mindful, focused manner. For a relatively small town, Lewes boasts an impressive range of independent dining options. From cosy pubs and pizzerias to vibrant Thai and Indian eateries – and as of last week, there’s a new addition that’s already making waves: a Japanese restaurant that’s not to be missed, Haru Izakaya Lewes.

Located just up from the station on the site where Fork used to be, it’s a spot that feels as though it was always meant to be a Japanese. The decor of Haru Izakaya Lewes is minimalist and relaxing with orange tiled floors and sleek wood-panelled walls. There a counter top where you can dine and watch the chefs hard at work, or a range of tables for both couples or larger groups. A terrace at the back begs for languid summer evenings spent soaking up the last of the suns rays while sipping on a glass of Sake and picking at a big bowl of tempura vegetables. 

It’s a Sunday night when we visit yet the restaurant is busy and the atmosphere is buzzing with the kind of low-key hum that signals a local favourite in the making.

Staff are friendly and welcoming and we’re seated at a table by the window. Light floods in and it’s a beautiful spot to both watch the happenings of the kitchen and also passers-by outside. Japanese dining culture places a strong emphasis on sharing plates, especially in izakayas, informal pub-restaurants known for their flavourful small dishes shared among friends. That spirit is alive and well at Haru Izakaya Lewes. The menu is built around shareable dishes such as small plates, salads, tempura, yakitori and kasiyuki. There are then a range of rice and noodle dishes, uramaki rolls and sushi.

It’s recommended we pick 2-3 dishes each to share between us and see how we get on. We order a bottle of rose which is promptly brought over while be try and make our decision. With not only a tantalising array of choices on the menu, but also the scents of the open kitchen wafting over to us it’s no mean feat!

Drinks wise there is a great selection including Japanese beers Asahi and Kirin, wines, house cocktails, Japanese spirits, Sake, teas (including bubble tea) and a range of soft drinks.

We eventually settle on prawn and vegetable tempura, Karaage chicken, chicken yakitori and Angus beef tataki. Dishes are brought out as they’re made so everything is fresh and it laces the meal out nicely. Flavour is the name of the game here and I’m impressed in how simply delicious everything is.

The Angus beef tataki, lightly seared, thin slices of marinated beef served with a citrusy soy is a standout. The karaage chicken which is marinated and covered in batter  and the chicken yakitori skewers are also fantastic.

For mains we share chicken yakisoba – a very generous portion where tender strips of chicken are tangled with crisp vegetables and noodles in a rich, unami sauce. It was tangy, flavoured and divine (and had us fighting for the last bite!)

Dessert wise I opt for the chocolate Dorayaki which is a traditional Japanese desert. Two fluffy pancakes are delivered with a decadent chocolate cream sandwiched in the middle. My partner selects an ice cream bowl for something light to round the meal off. 

Prices at Haru Izakaya Lewes are very reasonable and you can easily have a special meal for two with a bottle of wine for under £80. Alternatively, you can pop in for a bowl of fresh curry and a Japanese tea and you’re looking at under £20 per person.  

Everything is beautifully prepared and unfussy, perfectly flavoured and great sized portions. It’s somewhere you can come for a date night and spend your time relaxing over a few dishes or you can pop in for a warming bite to eat or your way home from work when you just don’t fancy cooking. The service is fantastic and you can feel their own passion for the restaurant and the care they put into everything they do. 

Haru Izakaya is a new player to the Lewes scene but feels like it’s always been here. It offers a warm welcome when you enter and fresh, flavourful food that won’t disappoint. Italian lager, Birrificio Angelo Poretti, kicked off its newest advertising campaign “Welcome to the Lake”, with an event at Frameless Immersive Art Experience last Thursday.

The fully immersive evening took place deep within the lair of the Frameless experience based near Marble Arch. On arrival, we were greeted with a stunning Birrificio Angelo Poretti bar, offering pints, as well as an array of light and bubbly soft drink options. They were all delicious and were a great way to start the evening. 

There were two rooms to explore as we sipped on our beers. The first had a giant chess board with pawns which moved by themselves (very Happy Potter-esque). The other was kitted out with cute bistro-style garden furniture and flowers in hues of blue and lilac. All of this was set against a black and white backdrop. This is where we got to experience just how special the Frameless experiences are. Imagery and videos of beautiful lakes and stunning Italian cityscapes were projected onto the walls of each room, helping us to dive headfirst into Poretti’s world. Not sure how much time passed, but it felt like time had stood still as I perched on a bench, sipping a beer, and taking in the landscapes projected across the room. 

After some time flowing between the rooms and the Poretti bar, we were ushered into the larger of the two rooms. As we waited for a surprise performance to begin, I got a jump-scare from what I thought was a stone statue that turned out to be a human statue, sipping on a beer! The moving human statues were a great addition, making a number of people jump by suddenly moving or interacting with the crowd. 

Halfway through the night, the music changed its beat and an individual in the crowd broke out into a dance routine in the middle of the room. He was then joined by one, two, then up to eight dancers, uninhibitedly boogying away. The performance ended by pulling members of the crowd into the centre of the room, encouraging them to get moving too.

If this wasn’t enough, the performance was then followed by a surprise DJ set from Femi Koleoso of Ezra Collective. This was certainly the cue for everyone to get up and start dancing. 

What struck me most, was the focus on simplicity throughout the evening – from the beer and drinks served to the live performances from the flash mob and human statues. Making something simple yet effective is no mean feat, so hats off to Poretti. I’m excited to see what the next few months has in store for them. I’ll certainly be sipping a Birrificio Angelo Poretti in a beer garden this summer.

Set in the idyllic lakes of Northern Italy, its aim is to inspire people to discover the joy and satisfaction that comes from being original and extraordinary.
